We’ve recently done a Catering Gig for a customer who wanted a full custom menu from us. Now, we LOVE bringing to life the food people want, and this 50th birthday celebration was absolutely no different! The theme was “Viking” and we were asked to do an Asado style pig (A Splayed out pig cooked over an open flame). We picked up this monster 40kg pig from our supplier and off we went. Unfortunately the weather was against us and it was almost torrential rain for the full week leading up to it, and the day of! Plans change and we adapt so instead the pig went into the Hogpit Smoker Redneck to be smoked. 16hrs later and the pig was ready to serve in a grazing style manner in the middle of the table with Brisket, Chicken Wings, Smoked Corn, Smoked Watermelon, Smoked Pineapple, Potato Bake and our own recipe Sweet Memphis Slaw. Without a doubt this pig was THE most delicious, succulent, mouth watering pork we have ever had! Our customer was still excited about it days after the event! So we couldn’t have asked for it to turn out any better! We cant wait to do the next one!
